Thailand food solo: how do you eat properly when there is only one of you?

A lot of Thai eating is built around sharing several dishes, which quietly punishes anyone at a table alone. Street stalls and single-dish shops solve it, but people often default to whatever is easiest to order and end up eating the same three things for two weeks.
