Khao soi in Chiang Mai that is not a tourist shop?

I keep getting Nimman bowls with an English paragraph. I want the coconut curry noodle, not a photoshoot.

Same bowl, different room

You want the Chin Haw / Muslim-kitchen storyShops near the mosque catchments, not the largest English menuThe first Nimman board with a photo of a sunset
You will sit in Nimman anywayFine. Pay the Nimman tax. It is still khao soiPretending it is a secret
You need no porkAsk. Some kitchens are Muslim-run; some are notA sticker
You only have one lunchPick a shop that is actually full of people eating noodlesA cooking class brochure

Chang Khlan vs Nimman is the usual fork. The north halal map is a different question if you need the kitchen to be Muslim.

Nimman or the mosque side, and pork or not.

Nimman will sell you a pretty bowl. Chang Khlan / mosque side will sell you a bowl people actually eat for lunch. Both can be fine. The English paragraph is the tell, not the coconut.

Full of local lunch is the tell. A sunset photo is not. I would not die on a brand. I would skip the cooking-class brochure.

Old City vs Nimman is the bed thread. This is lunch. I would eat near where I already am unless the bowl is the day.

If you need the kitchen Muslim-run, that is the mosque map, not a vibe. A khao soi shop can be that. Ask. Do not assume the English menu is the opposite of halal.

I would not fly to Chiang Mai for a Bangkok mall khao soi. You are already there. Pick a full shop. Move on.

Wifi cafe and khao soi are different rooms. I would not judge a noodle shop by whether it took my call.

One lunch. I would not spend the morning researching a “secret.” Full shop, eat, walk.

Kids: coconut curry can be a lot. I would still pick a shop that is feeding families, not a brochure.

10 nights. I am not building an itinerary around a noodle ranking. If I get to CM, I will eat where it is busy.

I have not left Bangkok. If I get north I want the bowl, not a hunt. Busy shop. That is enough instruction.

I prebooked Bangkok night one. Chiang Mai lunch is a later problem. Busy shop is still the rule I would use.
