No single winner — Khao Soi Khun Yai near Chang Phueak gate (lunch only, cash) is the local cult pick. Khao Soi Mae Sai in Nimman for consistent tourist-friendly bowls (~60–80 baht). Khao Soi Lam Duan Fah Ham for richer coconut curry. Order "sen lek" noodles, add pickled mustard and shallots. Morning markets beat dinner for khao soi — many shops sell out by 2pm. I'll fight you on north gate vs Nimman but both beat airport mall versions.
